This week, I have five recipes to share with you, that I hope will be useful and offer some inspiration in the coming days.
Here they are:
Meera Sodha’s Potato and Spinach curry (photograph above) was a huge hit. It is so easy to make and absolutely full of flavour, although I was generous with my spice measurements. I added the spinach much later (in the last 10 minutes) so it wasn’t as cooked down, and we all really enjoyed it. Just the job for an easy and economical weekday meal.
Jeremy Lee’s Walnut Cake has been on my list to try for ages, and I gave it a go this week. It is a lovely, light cake with a fantastic flavour and texture. I served it with vanilla ice cream and chocolate sauce as directed in his excellent book, COOKING. The recipe can also be found online here.
This Porcini ragù recipe from Ixta Belfrage is wonderfully easy to make and yet delivers deeply savoury and complex flavours. A real treat.
My apple tarte tatin would make a fantastic pudding if you’re cooking for family and friends
And finally, I made this beef and red wine lasagne this week. The recipe is published here on Substack for my paid subscribers.
Whatever you’re up to, I hope you have a great weekend. I’ll be getting ready for a trip to Scotland next week. I can’t wait!
