As I write, I’m preparing to go to Italy for the next week. I’m sure I’ll tell you more about it here when I’m back. When I go away for work, which I do quite often, I always ask what I can cook to leave behind whilst I’m away. There’s always a request for homemade bread, which I make in batches and slice before freezing, but a curry of some sort is usually fairly near the top of requests.

As we went into lockdown, my pipeline of work for the whole of 2020 (and beyond) pretty much evaporated in just a few days. With a lot more time on my hands, I cooked my way through those strange months, needing to find new ways to occupy myself. One of the objectives I set was to improve my curry repertoire. We’re all pretty happy with how that turned out.
