Five recipes I've loved making this week, that I hope you'll enjoy too
I have received so much wonderful feedback from readers who have enjoyed my recipe recommendations over the last year.
This week, I have five recipes to share with you, that we have tried and loved. Here they are:
Darina Allen’s Spiced Aubergine with Chickpeas and Goat’s Cheese.
The above photograph shows the dish I made, which I slightly adapted by serving with feta cheese, instead of goat’s cheese. I toasted and ground the spices before adding them into the dish, and served it with plenty of fresh rocket. I served it with a roast loin of pork, as it needed using, which worked very nicely, but this would make a fantastic vegetarian meal on its own.
Thomasina Miers’ Parsnip and Shallot Pasta
I’ll admit, my audience was deeply sceptical, when I announced I was making parsnip pasta for supper. We had loads of parsnips left over after Christmas, and had all the ingredients to hand in need of using up. This was really delicious though, and surprised and delighted my family, who went back for seconds.
Hot smoked salmon with soba noodles and greens
This sort of food is very satisfying and clean tasting at this time of year.
It needs some adjustment if you are based in the UK, like me, so try sea salt, light brown soft sugar and pan choi instead.
A winter vegetable broth from Daylesford
This is a lovely, light, vegetable-focussed broth, and is another great meal to enjoy at this time of year, ideally for lunch. I leave out the black radish and swap chervil for parley, as it’s what I can easily get hold of.
I’ve posted my recipe for perfect roasted rhubarb on my website. The forced Yorkshire rhubarb is now in the shops and looking and tasting wonderful.
