I know we are not into December yet, but I wanted to start to share some of my very favourite festive recipes with you in good time, in case you’d like to give them a go.

The first of which is my Christmas cake recipe, which is my go-to recipe. I like it because it’s very fresh and fruity, which quite a light texture and bright fruit flavour, lifted by the citrus.

This recipe can helpfully be made right up until the last minute, as it doesn’t really need any maturing. However, I often like to make it in November, so that I can take the time to enjoy baking, rather than do it in a rush nearer the time. It also keeps very well when made in advance, although I do cover it with marzipan and fondant icing as soon as I can after baking and cooling.
