This cake is such a favourite in our house. It’s a wonderfully sticky, spicy, dense yet tender ginger cake, packed with generous chunks of preserved stem ginger and a kick from the rum. By all means, leave it out if you’d prefer. It really is not essential. I do love it though, and having rather overcatered for our household rum requirements on our last trip to Barbados, I’m always glad to find a recipe to slosh it into.
