Happy Easter
Today is all about wrapping up loose ends before the long weekend. I’m looking forward to having a restful few days with some good company and good food.
I’ve got a simple menu planned. I’ve just taken delivery of some amazing smoked salmon, scallops and fresh fish to have tomorrow. We have a leg of lamb to roast on Sunday. I roast it until it’s pink and will either serve salsa verde, mint hollandaise or anchovy aioli with it, depending on how I feel, and I’ll probably make the lemon posset and pistachio shortbread again to go with it as it was so popular last time.
